I impressed myself

Seriously, I did. And you should be too! This is quite a feat for me. It all began when I saw this recipe in the Kraft Food and Family magazine.



It's for a seriously yummy lemon cake. The recipe calls for a lemon cake mix, 2 boxes of lemon pudding and cool whip. When I went to the store, I could not find a lemon cake mix. Apparently they didn't have any in stock...? So, like a true chef, I improvised! I bought a white cake mix. Aren't you already impressed with my mad skills?

The cake was actually pretty easy to make. It's just two round cakes with lemon pudding filling and cool whip (fat-free) instead of icing. It actually turned out really tasty! I think if I'd had a lemon cake mix, it would have been better, but it was tasty nonetheless.

But nobody said tasty had to be pretty.



I guess I need to work on my icing skills. Yikes. Hubs really liked it though, so it passed the test. I love lemon. It reminds me of spring and summer. Do you have any favorite summer recipes?

Oh! And my beautiful blog friend Brandi gave me this sweet award! Hers was one of the first blogs I started following. I just love her awesome attitude! She's a doll! Good job! Your icing looks fine! (I teach a cake decorating class, so I see plenty of newbie work). A trick, put the icing [or coolwhip] in a large ziplock bag, cut off a corner and pipe the icing on the cake, cover the entire thing, then go back and smooth, you wont get any crumbs in it that way!
Of course, I don't see any crumbs, so you may not even need my hint!

I was always in awe of people who could ice cakes all pretty and stuff. But it's probably overrated when you're baking for a man. Men seem to prefer quality taste over pretty icing that hides something of no substance.

...in cakes, anyway. Their preferences in women might not always follow that same logic. ;)

That's so funny that you blog about lemon cake because I was debating buying one at the grocery store last night... how lazy, I know.. I saw it and wanted it. I didn't want to actually have to make it haha. You have convinced me that making one myself will taste a whole lot better!

Just wanted to say I came across your blog today and it is too cute! I am not so domesticated (but can cook) but hate to clean! :) I don't think I have ever really made a cake except for Duncan Hines. I can cook but am scared to bake. I would love to be able to make wedding cakes!!!!!
